Take a more personal approach and treat every customer as if they are your only customer. Once we were pretty well locked in, my realtor and I couldn't get the loan officer to return calls or emails, sometimes for days at a time. More organization and more communication with the realtors and title company involved in the home purchase.

Having one set person in charge of everything from beginning to end. I had a Loan Officer and his associate both working with me and sometimes the information wasn't passed between them. Also, it made it a little difficult when I had an issue as far as who I should have contacted.
